Ingredients
- 4 Pounds strawberries
- 2 Cups honey divided
- 2 Vanilla beans split and scraped
- 1 Tablespoon lemon juice
- 1 Tablespoon calcium water part of the Pomona's Pectin system
- 1 Tablespoon Pomona's Pectin
- Denali Lids
- Denali Rings
Directions
This honey sweetened strawberry vanilla jam is full of warming, bright sweet summer. It’s quick and easy to make too, making it ideal for spring and summer. First you want to prepare your jars and lids by having a boiling water bath.
Combine your mashed strawberries with 1 ½ cups honey, vanilla bean seeds, calcium water, and lemon juice in a large pot. (You want to make sure the honey dissolves so give it a good stir.)
Then you can place the pot over high heat and bring to a boil. Once the fruit boils, reduce to medium-high heat and continue to cook at a low boil until the volume in the pot has reduced by ¼ . This will take 15 to 25 minutes, depending on the strawberries.
While the fruits cook add in the pectin powder in with the remaining honey and stir that up. Once the pot is reduced, stir in the honey and pectin slurry. Then return the jam to a boil and cook for 3-4 minutes.
When the jam is done cooking, funnel it into jars leaving ¼ inch of headspace. Clean around the rims and put the rings on finger tip tight. Finally process in a boiling water bath for 10 minutes (adjust for altitude).
Check the seals and store away after they have been cooled.
