Preserving Lemons

Ingredients
- 8 lemons (for 3 pint size jars)
- 2-3 cups sugar
- 3 pint size glass jars
Directions
- Wash and scrub all your lemons thoroughly then slice them into rings.
- Get your clean jars and add one lemon ring, throw in 3 tablespoons of sugar. Keep stacking your layers and repeating the process (3 tablespoons of sugar per layer) until you reach the top of the jar, pressing down on the lemon rings as you stack.
- Then cover it with your lid and refrigerate. The sugar will turn into a syrup as it stands in the fridge. Preserved lemons can be stored in the refrigerator for up to 6 months!
